Vegetables Classification by Season

Warm Season Vegetables.
Those vegetables in which the edible part is either a seed or fruit, are warm season such as tomato, bean, pea, squash, melon, tomatillo, peppers, corn, squash, okra, squash, eggplant, cucumber.
Cool Season Vegetables.
Those vegetables in which the edible part is either a stem, root, leaf or flower are cool season vegetables, such as:
  • stem:    (potato, Asparagus, celery)

  • root:      (carrot, radish, beets, potato)

  • leaf:       (lettuce, celery, spinach, cabbage, onion)

  • flower:  (broccoli, cauliflower, artichoke)

Exceptions:
Peas and faba beans (fruits) are cool season vegetables sweet potato and New Zealand spinach (root / leaf) are warm season vegetables.
